1 cup tomato purée
½ cup heavy cream
2 tbsp unsalted butter
1 tsp sugar

Fresh cilantro (for garnish)
Instructions
- Sear the Chicken: Heat oil in a skillet over medium-high. Cook diced chicken thighs until golden (5-6 mins). Remove and set aside.
- Sauté Aromatics: In the same pan, cook onions until soft. Add garlic, ginger, and spices; toast for 1 minute.
- Simmer Sauce: Stir in tomato purée, sugar, and ½ cup water. Simmer for 10 minutes to thicken.
- Add Cream & Chicken: Reduce heat. Stir in cream, butter, and cooked chicken. Simmer 5 minutes.
- Finish: Taste for salt. Garnish with cilantro. Serve with rice or naan.
