Description

These Oatmeal Raisin Cookies are soft, chewy, and loaded with hearty oats and sweet raisins. With a hint of cinnamon and vanilla, they make the perfect comforting treat for any time of the day.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins
  • 1/2 cup chopped walnuts (optional)

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Stir in the oats, raisins, and walnuts (if using) until evenly distributed.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra plump raisins, soak them in warm water for 10 minutes before adding to the dough.
  • Substitute chocolate chips for raisins if you prefer a different flavor twist.
  • Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
